Carbone keeps its dining-room energy rather than switching into buffet mode — the restaurant's actual Italian-American menu, a live DJ, and a semi-open terrace built for Doha summers. It's an independent restaurant rather than a hotel property, sitting across the Lusail Marina promenade, and despite being newer than most of its hotel competition it's already one of the better-reviewed Friday brunches in the city.
