The kitchen builds on Peruvian staples — ceviches, tiraditos, anticuchos — but the standouts lean Nikkei, like arroz Nikkei (Chilean sea bass with chili and lime over rice) and costillas de res, beef ribs finished with miso and aji limo. Attached is the Pisco Bar, styled after Lima's historic drinking dens, pouring Pisco Sours and running nightly DJ sets under the COYA Music banner. It's less a quiet dinner spot and more a full evening — book the private dining room if you want to pull a celebration away from the noise.
