Provok occupies the 33rd and 34th floors of Fairmont Doha, one half of the sail-shaped Katara Towers, doing double duty as a teppanyaki restaurant and a proper rooftop bar once the kitchen quiets down. The view is the real draw — Lusail's skyline and the Gulf laid out below — but the cocktail program and open-flame theatre keep people at the bar rather than just at the railing.
